Le Sénégal à l’honneur ! Le pays peut être fier en cette fin d’année 2021, après des années de persévérance, il a réussi à convaincre l’Unesco d’inscrire au patrimoine culturel immatériel de l’humanité, son plat typique national : le ceebu jën, un mot qui veut dire littéralement « du riz avec du poisson » en wolof, et plus connu sous le nom de thiéboudiène. Si l’Unesco a fait ce choix, c’est surtout que le thiéboudiène a dépassé les frontières du Sénégal pour gagner toute l’Afrique. « Je salue l’inscription du ceebu jën, plat national sénégalais, sur la liste du patrimoine immatériel de l’Unesco. C’est une belle illustration de la renommée internationale de l’art culinaire sénégalais », a salué le président Macky Sall.
Une recette entre histoire et résilience
Tout a commencé au siècle dernier, à Saint-Louis, l’ancienne capitale de l’Afrique occidentale française (AOF), elle-même inscrite au patrimoine matériel de l’Unesco et qui abrite des communautés de pêcheurs. « Tout le monde attribue l’invention de ce mets à Penda Mbaye (1904-1984), une cuisinière du village de Guet-Ndar » à Saint-Louis, dit l’Unesco. Elle aurait cuisiné ce plat pour les convives d’un gouverneur, selon les historiens.
Le thiéboudiène, c’est aussi l’histoire de l’appropriation d’une culture, le riz, par les colonisés. « Le colonisateur avait imposé les cultures commerciales à la colonie et introduit du riz importé de ses colonies d’Indochine en substitution aux cultures vivrières. Les communautés ont su, dans la résilience, s’adapter en inventant une recette à base de riz et de poisson : le Ceebu jën. »
Bien que les recettes varient d’une région à l’autre, le plat est généralement fait à base « de darne de poisson, de brisures de riz, de poisson séché, de mollusques et de légumes de saison, tels que les oignons, le persil, l’ail, le piment, les tomates, les carottes, les aubergines, le chou blanc, le manioc, la patate douce, le gombo et le laurier », indique l’Unesco sur son site. Préparé avec ou sans la tomate, il est servi souvent dans un grand plat comme déjeuner ou dîner dans la plupart des ménages et dans les restaurants du pays.

On apprend également que « la qualité du poisson et le choix des légumes sont déterminés par l’importance de l’événement ou le degré d’affection que l’on porte à l’invité ». Plus surprenant, il faut savoir que le thiéboudiène est lié à des pratiques culturelles spécifiques. « Par exemple, il est interdit de s’asseoir avec un genou levé, le bol doit être tenu de la main gauche et les grains de riz ne doivent pas tomber en mangeant », détaillent les spécialistes. « Le ceebu jën et les pratiques qui y sont associées sont considérés comme une affirmation de l’identité sénégalaise. » Autre particularité, la recette et les techniques de préparation se transmettent traditionnellement de mère en fille selon la tradition orale africaine.
